I have a cold. It’s the one time I turn into a whiny… You can guess it. My usual good humour departs and in its place is a miserable excuse for a person that secretly wishes everyone would just die or disappear.

I can’t even blame this one on my eight-year-old daughter and her class of virus carrying friends anymore, as she’s now 24.

I now blame the gym and all the people who go there to: “Sweat it out”. I have some advice for those people – DON’T!

Stay home, make this soup and keep your infectious, germ spreading keister away from the healthy members of society. What did we ever do to you?

I usually have a couple batches of homemade fat-free broth in the freezer. If you’d like my fool-proof and easy way to make it, go to Facebook.com/DefineFitYMM . For this recipe, I’ve put store bought broth. Feel free to substitute the homemade. It’s totally worth it and the flavour is unbeatable.

Homemade Chicken Soup
Ingredients:
900ml tetra pack chicken broth, no sodium added
(Or 4 cups homemade broth)
1 bay leaf
1/4 tsp. Cumin
1/4 tsp. red pepper flakes
1/4 tsp. Paprika
1 cup onion, chopped
1 cup celery, chopped
1 tbsp. garlic paste
1 tsp. lemongrass paste (optional)
2 cups mushrooms, sliced
2 cups carrots, sliced
2 lbs. precooked chicken breast, cubed
2 cups precooked brown or wild rice

Instructions:
1. Place broth and bay leaf in slow cooker on high.
2. Cook onion and celery in fry pan on medium heat, until half cooked.
3. Add spices and pastes. Cook for two more minutes. Add to pot.
4. In same fry pan, cook mushrooms, until lightly browned. Add to pot.
5. Add carrots to pot.
6. Cook on high setting for four hours.
(This gives you just enough time for two sappy, romantic movies on the Woman’s channel before the next step. Or enough time for a nice bubble bath and a bottle… I mean, a glass of good wine.)
7. Add chicken and rice. Switch to low setting and cook for 30-45 minutes.
8. Have a nice steamy bowl of soup. And remember, your family is not actually trying to annoy you.

And no, having a cold is not a legal defence… Although, there are days I wish it was, but it’s not so I’ll just stick with the wine. For more recipes, nutrition and workout tips follow me or send me a message!
